Recipes--Yum!!

Black bean burritos

10 inch whole wheat tortillas
2 tablespoons olive oil
1 medium onion, chopped
1/2 red, green, yellow, and orange bell pepper, chopped (we love peppers :))
3 cloves garlic minced
2 (15 ounce) cans black beans, rinsed and drained
1 minced jalapeno pepper (optional)
8 ounce cream cheese (this is a little to much for us, so we are going to start using 4 ounces)
1 can Ro-Tel tomatoes and green chilies, if you want to go fresh then add 2 diced tomatoes and 1 diced green chili.
2 tablespoons chili powder
1 tablespoon cumin
1 teaspoon garlic powder
1 teaspoon onion powder
½ teaspoon paprika
¼ teaspoon red pepper (optional)
1-1/2 teaspoons salt
½ teaspoon pepper
Directions:
1. Wrap tortillas in foil and place in oven heated to 350 degrees F (175 degrees C), bake for 15 minutes or until heated through.
2. Heat oil in a 10-inch skillet over medium heat. Place onion, bell peppers, minced garlic and jalapenos in skillet, cook for 2 minutes stirring occasionally. Pour beans and Ro-Tel tomatoes into skillet add chili powder, cumin, garlic salt, onion salt, paprika, red pepper, salt, and pepper, cook 3 minutes stirring.
3. Cut cream cheese into cubes and add to skillet with salt. Cook for 2 minutes stirring occasionally.
4. Spoon mixture evenly down center of warmed tortilla and roll tortillas up. Serve immediately.


Sasha's Bean's Prounouned like a "sash" :)

Sautee 1/2 yellow onion, 1/2 medium red pepper & 1/2 a medium green pepper (all of them diced) in a little olive oil.
Put in a crock pot with 1 1/2 cups ketchup, 1/2 cup water, 1/2 cup brown sugar, 2 bay leaves, 2-3 t apple cider vinegar, 1 tsp ground (or regular) mustard, salt, pepper & garlic to taste & a bottle of bbq sauce.
Open, drain & rinse the following beans:
1 can kidney
1 can great northern
1 can lima
1 can black
1 can black eyed peas
Add these to the crock pot too. Cook on low for 5-7 hours.


Homemade Vegetarian chili

2 tablespoons Olive Oil
4-6 tomatoes, blend 4 in a blender and dice 2, or use 2 cans 14oz tomatoes un-drained
2 Bell peppers chopped (I use half of a red, orange, green, and yellow)
1 medium onion chopped
1 fresh jalapeno pepper chopped
2 cans kidney beans (I drain 1 and leave the juice in the other, just depends on how thick you like it)
2 can chili beans un-drained
1/2 can bud light
And then my homemade taco seasoning, you can use this on veggie tacos or burritos super YUM!
2 tablespoons chili powder
1 tsp garlic powder
1 tsp onion powder
1/4 tsp red pepper (optional this makes it super spicy)
1/4 tsp dried oregano
1/2 tsp paprika
1 tablespoon ground cumin
1 tsp sea salt
1/2 tsp ground black pepper

In a large pot put oil, garlic, onion, jalapeno peppers, and bell peppers simmer about 5 mins or until peppers are soft.
add kidney beans, pinto beans, bud light, and seasonings, simmer at least 30 mins or longer if you have more time.
You can add whatever veggies you like, we sometimes add celery. You can also add a can of vegetarian refried beans, but if you do this make sure to not drain any of the other beans, otherwise it will be too thick.
